Ingredients

  • Pasta (spaghetti or linguine) - 200 grams
  • Soy sauce (low sodium) - 4 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Green onions (sliced) - 2 tablespoons
  • Carrot (julienned) - 1 small
  • Broccoli florets - 100 grams
  • Red pepper flakes - 1/2 teaspoon
  • Black sesame seeds - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta cooks, heat the sesame oil in a large skillet over medium heat.
  3. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  4. Add the julienned carrot and broccoli florets to the skillet and stir-fry for 3-4 minutes until they are tender but still crisp.
  5. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it directly to the skillet with the vegetables.
  6. Pour in the soy sauce and add red pepper flakes, tossing everything together until well combined.
  7. If the pasta seems dry, add a little reserved pasta water to achieve your desired consistency.
  8. Remove from heat, stir in sliced green onions, and season with salt and pepper to taste.
  9. Serve warm, garnished with black sesame seeds.
