- Soy sauce (low sodium) - 4 tablespoons
- Sesame oil - 1 tablespoon
- Garlic (minced) - 2 cloves
- Green onions (sliced) - 2 tablespoons
- Carrot (julienned) - 1 small
- Broccoli florets - 100 grams
- Red pepper flakes - 1/2 teaspoon
- Black sesame seeds - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta cooks, heat the sesame oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
- Add the julienned carrot and broccoli florets to the skillet and stir-fry for 3-4 minutes until they are tender but still crisp.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it directly to the skillet with the vegetables.
- Pour in the soy sauce and add red pepper flakes, tossing everything together until well combined.
- If the pasta seems dry, add a little reserved pasta water to achieve your desired consistency.
- Remove from heat, stir in sliced green onions, and season with salt and pepper to taste.
- Serve warm, garnished with black sesame seeds.
