Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
- In a large skillet, heat the olive oil over medium heat. Add the kosher sausage, breaking it into pieces with a spatula, and cook until browned and cooked through, about 5-7 minutes.
- Add the minced garlic and sliced zucchini to the skillet. Sauté for about 3-5 minutes until the zucchini is tender and slightly golden.
- Stir in the halved cherry tomatoes and cook for an additional 2-3 minutes until they begin to soften.
- Combine the drained pasta with the sausage and vegetable mixture in the skillet. If needed, add reserved pasta water a little at a time to help combine everything smoothly.
- Season with salt, black pepper, and fresh basil. Toss to combine, then remove from heat.
- Serve the pasta warm, topped with grated Parmesan cheese.
