  • Cherry tomatoes - 150 grams, halved
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, chopped

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  2. In a large skillet, heat the olive oil over medium heat. Add the kosher sausage, breaking it into pieces with a spatula, and cook until browned and cooked through, about 5-7 minutes.
  3. Add the minced garlic and sliced zucchini to the skillet. Sauté for about 3-5 minutes until the zucchini is tender and slightly golden.
  4. Stir in the halved cherry tomatoes and cook for an additional 2-3 minutes until they begin to soften.
  5. Combine the drained pasta with the sausage and vegetable mixture in the skillet. If needed, add reserved pasta water a little at a time to help combine everything smoothly.
  6. Season with salt, black pepper, and fresh basil. Toss to combine, then remove from heat.
  7. Serve the pasta warm, topped with grated Parmesan cheese.
