Ingredients

  • Pasta (e.g., penne) - 200 grams
  • Kosher sausage (chicken or turkey) - 200 grams
  • Fresh spinach - 150 grams
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Red pepper flakes - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional) - 30 grams, grated

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add the minced garlic and red pepper flakes to the skillet and sauté for about 1 minute until fragrant.
  4. Slice the kosher sausage and add it to the skillet, cooking until browned, about 5-7 minutes.
  5. Once the sausage is cooked, add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  6. Drain the cooked pasta and reserve 1/2 cup of the pasta water.
  7. Add the drained pasta to the skillet with the sausage and spinach, tossing to combine. If the mixture seems dry, add reserved pasta water a little at a time until you reach the desired consistency.
  8. Season with salt and black pepper to taste.
  9. Serve hot, topped with grated Parmesan cheese if desired.
