Ingredients

  • Pasta (fusilli or penne) - 150 grams
  • Kosher sausage (chicken or turkey) - 200 grams, sliced
  • Broccoli florets - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional, kosher) - 30 grams, grated

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. In the last 3 minutes of pasta cooking, add the broccoli florets to the pot with the pasta.
  3. While the pasta and broccoli are cooking, heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
  4. Add minced garlic and red pepper flakes to the skillet with the sausage, cooking for an additional 1-2 minutes until fragrant.
  5. Once the pasta and broccoli are done, reserve 1/2 cup of pasta water, then drain the rest.
  6. Add the drained pasta and broccoli to the skillet with the sausage, mixing well. If the mixture seems dry, add reserved pasta water a little at a time until the desired consistency is reached.
  7. Season with salt and black pepper to taste. If desired, sprinkle with grated Parmesan cheese before serving.
