Ingredients

  • Pasta (penne or rigatoni) - 150 grams
  • Kosher Italian sausage (sweet or spicy) - 200 grams
  • Red bell pepper - 1 medium, sliced
  • Yellow bell pepper - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Diced tomatoes (canned) - 200 grams
  • Oregano (dried) - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish, chopped (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil. When hot, add the kosher sausage and cook until browned, breaking it up with a spoon, about 5-7 minutes.
  3. Add the minced garlic, sliced red and yellow bell peppers to the skillet. Sauté for about 5 minutes until the peppers are tender.
  4. Stir in the diced tomatoes and oregano. Season with salt and black pepper. Simmer for about 5 minutes, allowing the flavors to meld.
  5. Add the cooked pasta to the skillet and toss everything together until well combined. Adjust seasoning if necessary.
  6. Serve hot, garnished with fresh parsley if desired.
