  • Pasta (penne or rigatoni) - 200 grams
  • Kosher sausage (chicken or turkey) - 250 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Crushed tomatoes - 400 grams (1 can)
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - a handful, chopped (for garnish)
  • Parmesan cheese - 30 grams, grated (optional, ensure it's kosher)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, about 10-12 minutes.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
  3. Add the minced garlic and cook for an additional 1 minute until fragrant.
  4. Slice the kosher sausage into bite-sized pieces and add to the skillet. Cook until browned, about 5-7 minutes.
  5. Stir in the crushed tomatoes, dried oregano, salt, and black pepper. Bring to a simmer and cook for another 5 minutes.
  6. Once the pasta is done, drain it and add it directly to the skillet with the sausage and sauce. Toss well to combine.
  7. Serve hot, garnished with fresh basil and grated Parmesan cheese if desired.
