  • Fresh spinach - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced

  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the salmon fillet to the skillet, season with salt and pepper, and cook for about 4-5 minutes on each side until cooked through and flaky.
  4. Remove the salmon from the skillet and flake it into large pieces with a fork. Set aside.
  5. In the same skillet, add the fresh spinach and sauté until wilted, about 2-3 minutes.
  6. Return the flaked salmon to the skillet, add the cooked pasta, lemon juice, and reserved pasta water. Toss everything together gently until well combined.
