Ingredients

  • Pasta (fusilli or penne) - 200 grams
  • Salmon fillet (skinless) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Fresh dill (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese (grated) - 30 grams
  • Cherry tomatoes (halved) - 100 grams

Steps

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the salmon fillet to the skillet, season with salt and pepper, and cook for about 4-5 minutes per side, or until cooked through. Remove the salmon from the skillet and flake it into bite-sized pieces.
  4. In the same skillet, add the halved cherry tomatoes and cook for about 2-3 minutes until they start to soften.
  5. Return the flaked salmon to the skillet and add the cooked pasta, chopped dill, lemon juice, and a splash of pasta cooking water if needed. Toss everything together gently to combine and heat through.
  6. Serve the pasta warm, topped with freshly grated Parmesan cheese and additional dill if desired.
