- Pasta (fettuccine or penne) - 160 grams
- Salmon fillet - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Heavy cream - 100 milliliters
- Lemon juice - 1 tablespoon
- Fresh dill - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving a bit of the pasta water.
- While the pasta is cooking, heat olive oil in a skillet over medium heat. Season the salmon fillet with salt and black pepper, then place it skin-side down in the skillet.
- Cook the salmon for about 4-5 minutes on each side, or until it's cooked through and flakes easily with a fork. Remove from the skillet and let it rest.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and bring it to a simmer.
- Stir in the lemon juice, chopped dill, and season with salt and pepper. If the sauce is too thick, add a bit of reserved pasta water to reach desired consistency.
- Add the cooked pasta to the skillet, tossing to coat it in the creamy sauce.
- Flake the salmon and gently mix it into the pasta, being careful not to break it up too much. Serve immediately, topped with grated Parmesan cheese if desired.
