- Pasta (spaghetti or fettuccine) - 200 grams
- Garlic - 1 whole head
- Olive oil - 3 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Cut the top off the head of garlic to expose the cloves and place it on a piece of aluminum foil.
- Drizzle 1 tablespoon of olive oil over the exposed garlic and wrap it tightly in the foil.
- Roast the garlic in the preheated oven for 25-30 minutes, until the cloves are soft and caramelized.
- While the garlic is roasting, bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- Once the pasta is cooked, reserve 1/2 cup of pasta water and then drain the pasta.
- Unwrap the roasted garlic and squeeze the cloves out of their skins into a bowl.
- In a large skillet, combine the roasted garlic with the remaining 2 tablespoons of olive oil and mash until smooth over medium heat.
- Add the drained pasta to the skillet and toss to combine, adding reserved pasta water as needed to create a sauce.
- Season with salt and black pepper to taste, then stir in the chopped parsley.
- Serve hot, garnished with grated Parmesan cheese if desired.
