Ingredients

  • Pasta (spaghetti or fettuccine) - 200 grams
  • Garlic - 1 whole head
  • Olive oil - 3 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the top off the head of garlic to expose the cloves and place it on a piece of aluminum foil.
  3. Drizzle 1 tablespoon of olive oil over the exposed garlic and wrap it tightly in the foil.
  4. Roast the garlic in the preheated oven for 25-30 minutes, until the cloves are soft and caramelized.
  5. While the garlic is roasting, bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  6. Once the pasta is cooked, reserve 1/2 cup of pasta water and then drain the pasta.
  7. Unwrap the roasted garlic and squeeze the cloves out of their skins into a bowl.
  8. In a large skillet, combine the roasted garlic with the remaining 2 tablespoons of olive oil and mash until smooth over medium heat.
  9. Add the drained pasta to the skillet and toss to combine, adding reserved pasta water as needed to create a sauce.
  10. Season with salt and black pepper to taste, then stir in the chopped parsley.
  11. Serve hot, garnished with grated Parmesan cheese if desired.
