Ingredients

  • Pasta (any type) - 100g
  • Rice (long-grain or basmati) - 50g
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 small, diced
  • Cherry tomatoes - 150g, halved
  • Vegetable broth - 300ml
  • Soy sauce - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium pot, bring 300ml of vegetable broth to a boil.
  2. Add the rice to the boiling broth, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked.
  3. Meanwhile, in a separate pot, cook the pasta according to package instructions until al dente. Drain and set aside.
  4. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion becomes translucent.
  5. Add the diced bell pepper and zucchini to the skillet, cooking for about 5 minutes until they start to soften.
  6. Stir in the halved cherry tomatoes, cooked rice, and cooked pasta. Mix well.
  7. Add 1 tablespoon of soy sauce, and season with salt and black pepper to taste. Stir everything together and cook for another 2-3 minutes until heated through.
  8. Remove from heat, garnish with fresh parsley, and serve warm.
