- Pasta (any type) - 100g
- Rice (long-grain or basmati) - 50g
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Bell pepper - 1 medium, diced
- Zucchini - 1 small, diced
- Cherry tomatoes - 150g, halved
- Vegetable broth - 300ml
- Soy sauce - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium pot, bring 300ml of vegetable broth to a boil.
- Add the rice to the boiling broth, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked.
- Meanwhile, in a separate pot, cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion becomes translucent.
- Add the diced bell pepper and zucchini to the skillet, cooking for about 5 minutes until they start to soften.
- Stir in the halved cherry tomatoes, cooked rice, and cooked pasta. Mix well.
- Add 1 tablespoon of soy sauce, and season with salt and black pepper to taste. Stir everything together and cook for another 2-3 minutes until heated through.
- Remove from heat, garnish with fresh parsley, and serve warm.
