Ingredients

  • Pasta (whole wheat or gluten-free) - 200 grams
  • Quinoa - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Spinach - 100 grams, fresh
  • Vegetable broth - 500 milliliters
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - for garnish

Steps

  1. Rinse the quinoa under cold water and drain.
  2. In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the broth is absorbed.
  3. Meanwhile, bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  4. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  5. Add the cherry tomatoes to the skillet and cook for about 5 minutes until they start to soften.
  6. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  7. Add the cooked quinoa and pasta to the skillet, tossing everything together until well combined.
  8. Season with salt and black pepper to taste. Remove from heat.
  9. Serve hot, topped with grated Parmesan cheese and fresh basil for garnish.
