- Quinoa - 100 grams

- Garlic - 2 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Spinach - 100 grams, fresh
- Vegetable broth - 500 milliliters
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Fresh basil - for garnish
Steps
- Rinse the quinoa under cold water and drain.
- In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the broth is absorbed.
- Meanwhile, bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the cherry tomatoes to the skillet and cook for about 5 minutes until they start to soften.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Add the cooked quinoa and pasta to the skillet, tossing everything together until well combined.
- Season with salt and black pepper to taste. Remove from heat.
- Serve hot, topped with grated Parmesan cheese and fresh basil for garnish.
