- Pasta (spaghetti or linguine) - 150 grams
- Fresh basil leaves - 50 grams
- Garlic cloves - 2
- Pine nuts - 30 grams
- Parmesan cheese (grated) - 30 grams
- Olive oil - 60 milliliters
- Salt - to taste
- Pepper - to taste
- Cherry tomatoes (optional, for garnish) - 100 grams
Steps
- Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve 1/4 cup of pasta cooking water and then drain the pasta.
- In a food processor, combine the basil leaves, garlic, pine nuts, and Parmesan cheese. Pulse until finely chopped.
- With the food processor running, slowly drizzle in the olive oil until the mixture becomes a smooth paste. If too thick, add a bit of the reserved pasta water to reach desired consistency.
- Season the pesto with salt and pepper to taste.
- In a large bowl, combine the drained pasta with the pesto, tossing well to coat the pasta evenly.
- If desired, garnish with halved cherry tomatoes and an extra sprinkle of Parmesan before serving.
