  • Green olives, pitted and sliced - 100 grams
  • Black olives, pitted and sliced - 100 grams
  • Cherry tomatoes, halved - 150 grams
  • Fresh parsley, chopped - 2 tablespoons
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional, for serving) - 30 grams

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the sliced green and black olives to the skillet, and cook for another 2-3 minutes, stirring occasionally.
  4. Add the halved cherry tomatoes to the skillet along with the red pepper flakes, salt, and black pepper. Cook for an additional 2-3 minutes until the tomatoes start to soften.
  5. Once the pasta is cooked, drain it and reserve about 1/2 cup of the pasta water. Add the drained pasta to the skillet with the olive mixture.
  6. Toss everything together, adding reserved pasta water as needed to create a light sauce. Stir in the chopped parsley.
  7. Serve immediately, topped with grated Parmesan cheese if desired.
