  • Shallot - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Dijon mustard - 3 tablespoons
  • Heavy cream - 100 milliliters
  • Vegetable broth - 100 milliliters
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Grated Parmesan cheese - 30 grams (optional)

Steps

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped shallot and sauté for 2-3 minutes until translucent.
  3. Add the minced garlic to the skillet and sauté for another minute until fragrant.
  4. Stir in the Dijon mustard, heavy cream, and vegetable broth. Cook for 2-3 minutes, stirring constantly, until the sauce is well combined and slightly thickened.
  5. Add the cooked pasta to the skillet and toss to coat in the mustard sauce. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.
  6. Season with salt and black pepper to taste. Stir in the chopped parsley before serving.
  7. Serve the pasta warm, topped with grated Parmesan cheese if desired.
