Ingredients

  • Pasta (spaghetti or fettuccine) - 150 grams
  • White miso paste - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Scallions (sliced) - 2 stalks
  • Baby spinach - 100 grams
  • Sesame seeds - 1 tablespoon
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. In a small bowl, whisk together the miso paste, soy sauce, and 2 tablespoons of water until smooth. Set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the sliced scallions to the skillet and cook for another 1-2 minutes until softened.
  5. Stir in the miso mixture and cook for 1-2 minutes, allowing the flavors to meld. If the sauce is too thick, add a little more water to reach your desired consistency.
  6. Add the baby spinach to the skillet and cook until wilted, about 2 minutes.
  7. Drain the cooked pasta and add it to the skillet, tossing to coat it in the miso sauce. Season with black pepper and red pepper flakes if using.
  8. Serve hot, garnished with sesame seeds and extra scallions if desired.
