- Soy sauce - 1 tablespoon

- Garlic (minced) - 2 cloves
- Scallions (sliced) - 2 stalks
- Baby spinach - 100 grams
- Sesame seeds - 1 tablespoon
- Red pepper flakes - 1/2 teaspoon (optional)
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
- In a small bowl, whisk together the miso paste, soy sauce, and 2 tablespoons of water until smooth. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the sliced scallions to the skillet and cook for another 1-2 minutes until softened.
- Stir in the miso mixture and cook for 1-2 minutes, allowing the flavors to meld. If the sauce is too thick, add a little more water to reach your desired consistency.
- Add the baby spinach to the skillet and cook until wilted, about 2 minutes.
- Drain the cooked pasta and add it to the skillet, tossing to coat it in the miso sauce. Season with black pepper and red pepper flakes if using.
- Serve hot, garnished with sesame seeds and extra scallions if desired.
