  • Fresh mint leaves - 30 grams (about 1 cup, loosely packed)
  • Garlic - 2 cloves, minced
  • Olive oil - 3 tablespoons
  • Lemon juice - 1 tablespoon
  • Parmesan cheese (optional, kosher) - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. While the pasta is cooking, finely chop the fresh mint leaves and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Once the pasta is drained, add it to the skillet with the garlic, then add the chopped mint, lemon juice, and a splash of the reserved pasta water. Toss everything together until well combined and heated through.
