- Olive oil - 3 tablespoons
- Lemon juice - 1 tablespoon
- Parmesan cheese (optional, kosher) - 30 grams, grated

- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
- While the pasta is cooking, finely chop the fresh mint leaves and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
