Ingredients

  • Pasta (spaghetti or fettuccine) - 150 grams
  • Pure maple syrup - 4 tablespoons (60 ml)
  • Olive oil - 1 tablespoon (15 ml)
  • Garlic (minced) - 2 cloves
  • Black pepper (freshly ground) - 1/2 teaspoon
  • Salt - to taste
  • Fresh parsley (chopped) - 2 tablespoons
  • Parmesan cheese (optional, for garnish) - 2 tablespoons

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, but not browned.
  3. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta.
  4. Add the drained pasta to the skillet with garlic, then pour in the maple syrup and toss to combine. If the mixture seems dry, add reserved pasta water a little at a time until the desired consistency is reached.
  5. Season with black pepper and salt to taste. Toss in the chopped parsley and mix well.
  6. Serve immediately, garnished with grated Parmesan cheese if desired.
