Ingredients
- Linguine pasta - 200 grams
- Lobster meat, cooked and chopped - 200 grams
- Olive oil - 2 tablespoons
- Garlic, minced - 3 cloves
- Cherry tomatoes, halved - 200 grams
- Fresh basil leaves, chopped - 1/4 cup
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
- Lemon juice - 1 tablespoon
- Parmesan cheese, grated - 1/4 cup (optional, ensure it's kosher)
Steps
- Bring a large pot of salted water to a boil and cook the linguine according to package instructions until al dente.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Stir in the halved cherry tomatoes and cook for 3-4 minutes until they start to soften.
- Add the cooked lobster meat to the skillet, followed by the salt, black pepper, and red pepper flakes, if using. Cook for another 2-3 minutes until the lobster is heated through.
- Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water and drain the rest.
- Add the drained pasta to the skillet with the lobster and tomatoes, tossing to combine. If the mixture seems dry, add a bit of the reserved pasta water.
- Stir in the chopped basil and lemon juice, mixing well.
- Serve the pasta hot, topped with grated Parmesan cheese if desired.
