  • Cherry tomatoes, halved - 200 grams
  • Fresh basil leaves, chopped - 1/4 cup
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Lemon juice - 1 tablespoon
  • Parmesan cheese, grated - 1/4 cup (optional, ensure it's kosher)

Steps

  1. Bring a large pot of salted water to a boil and cook the linguine according to package instructions until al dente.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Stir in the halved cherry tomatoes and cook for 3-4 minutes until they start to soften.
  5. Add the cooked lobster meat to the skillet, followed by the salt, black pepper, and red pepper flakes, if using. Cook for another 2-3 minutes until the lobster is heated through.
  6. Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water and drain the rest.
  7. Add the drained pasta to the skillet with the lobster and tomatoes, tossing to combine. If the mixture seems dry, add a bit of the reserved pasta water.
  8. Stir in the chopped basil and lemon juice, mixing well.
  9. Serve the pasta hot, topped with grated Parmesan cheese if desired.
