Ingredients

  • Lobster tail - 200 grams
  • Pasta (linguine or fettuccine) - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Shallot (finely chopped) - 1 medium
  • Cherry tomatoes (halved) - 150 grams
  • White wine (kosher) - 100 ml
  • Heavy cream - 100 ml
  • Fresh parsley (chopped) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving a bit of the pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.
  3. Add the halved cherry tomatoes to the skillet and cook for another 3-4 minutes until they soften.
  4. Pour in the white wine and allow it to simmer for about 5 minutes until reduced by half.
  5. Stir in the heavy cream and bring to a gentle simmer, cooking for 2-3 minutes until the sauce thickens slightly.
  6. While the sauce is simmering, cut the lobster tail lengthwise and remove the meat. Cut the meat into bite-sized pieces.
  7. Add the lobster pieces to the skillet, cooking gently for about 3-4 minutes until the lobster is just cooked through.
  8. Add the cooked pasta to the skillet, tossing to combine with the sauce. If necessary, add a splash of reserved pasta water to loosen the sauce.
  9. Season with salt, black pepper, and red pepper flakes if using. Stir in the chopped parsley just before serving.
  10. Serve hot, garnished with additional parsley if desired.
