- Lobster tail - 200 grams
- Pasta (linguine or fettuccine) - 150 grams
- Olive oil - 2 tablespoons
- Garlic (minced) - 2 cloves
- Shallot (finely chopped) - 1 medium
- Cherry tomatoes (halved) - 150 grams
- White wine (kosher) - 100 ml
- Heavy cream - 100 ml
- Fresh parsley (chopped) - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving a bit of the pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.
- Add the halved cherry tomatoes to the skillet and cook for another 3-4 minutes until they soften.
- Pour in the white wine and allow it to simmer for about 5 minutes until reduced by half.
- Stir in the heavy cream and bring to a gentle simmer, cooking for 2-3 minutes until the sauce thickens slightly.
- While the sauce is simmering, cut the lobster tail lengthwise and remove the meat. Cut the meat into bite-sized pieces.
- Add the lobster pieces to the skillet, cooking gently for about 3-4 minutes until the lobster is just cooked through.
- Add the cooked pasta to the skillet, tossing to combine with the sauce. If necessary, add a splash of reserved pasta water to loosen the sauce.
- Season with salt, black pepper, and red pepper flakes if using. Stir in the chopped parsley just before serving.
- Serve hot, garnished with additional parsley if desired.
