Ingredients

  • Linguine pasta - 150 grams
  • Cooked lobster meat - 150 grams, chopped
  • Fresh corn kernels - 1 cup (about 2 ears of corn)
  • Unsalted butter - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Shallot - 1, finely chopped
  • Heavy cream - 1/2 cup
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the linguine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
  2. In a large skillet, melt the butter over medium heat. Add the chopped shallot and minced garlic, sautéing until softened and fragrant, about 2-3 minutes.
  3. Stir in the fresh corn kernels and cook for another 3-4 minutes until they begin to soften.
  4. Pour in the heavy cream and bring to a gentle simmer. Add the lemon juice, salt, black pepper, and red pepper flakes (if using), stirring to combine.
  5. Fold in the cooked lobster meat and let the mixture simmer for an additional 2-3 minutes until heated through.
  6. Add the drained linguine to the skillet, tossing to combine with the sauce. If the sauce is too thick, gradually add reserved pasta water until the desired consistency is reached.
  7. Remove from heat and stir in the chopped parsley. Serve immediately, garnished with additional parsley if desired.
