- Lobster tail - 200 grams
- Pasta (linguine or fettuccine) - 150 grams
- Carrots - 1 medium, julienned
- Garlic - 2 cloves, minced
- Olive oil - 3 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant, but not browned.
- Add the julienned carrots to the skillet and sauté for 4-5 minutes until they start to soften.
- Meanwhile, prepare the lobster by cutting the tail into bite-sized pieces.
- Add the lobster pieces to the skillet and cook for 3-4 minutes until they are opaque and cooked through.
- Once the pasta is done, reserve 1/2 cup of the pasta cooking water, then drain the pasta.
- Add the cooked pasta to the skillet with the lobster and carrots, tossing to combine.
- If the mixture seems dry, add some reserved pasta water to reach desired consistency.
- Finish with lemon juice, chopped parsley, salt, black pepper, and red pepper flakes (if using).
- Serve immediately, garnished with additional parsley if desired.
