Ingredients

  • Lobster tail - 200 grams
  • Fettuccine pasta - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Shallot - 1 small, finely chopped
  • Cherry tomatoes - 150 grams, halved
  • White wine (Kosher) - 1/4 cup
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.
  3. Add the halved cherry tomatoes to the skillet and cook for another 2-3 minutes until they begin to soften.
  4. Pour in the white wine and let it simmer for 2 minutes, allowing the alcohol to evaporate and the sauce to reduce slightly.
  5. While the sauce simmers, place the lobster tail in a pot of boiling water for 5-7 minutes, or until the flesh is opaque and cooked through. Remove and let cool slightly, then chop the lobster into bite-sized pieces.
  6. Add the cooked fettuccine and reserved pasta water to the skillet, tossing to combine with the sauce. Incorporate the chopped lobster, fresh parsley, lemon juice, salt, and black pepper to taste.
  7. Cook for an additional 2-3 minutes, stirring gently until everything is well combined and heated through. Serve immediately.
