Ingredients

  • Lemon juice - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Capers, rinsed and drained - 2 tablespoons
  • Fresh parsley, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Grated Parmesan cheese (optional) - 2 tablespoons

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  4. Stir in the lemon juice, lemon zest, and capers, and cook for another 2 minutes, allowing the flavors to meld.
  5. Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water, then drain the pasta.
  6. Add the drained pasta to the skillet with the lemon and caper mixture, tossing to combine.
  7. If the pasta seems dry, add reserved pasta water a little at a time until the desired consistency is reached.
  8. Season with salt and black pepper to taste, and stir in the chopped parsley.
  9. Serve immediately, topped with grated Parmesan cheese if desired.
