Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Stir in the lemon juice, lemon zest, and capers, and cook for another 2 minutes, allowing the flavors to meld.
- Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water, then drain the pasta.
- Add the drained pasta to the skillet with the lemon and caper mixture, tossing to combine.
- If the pasta seems dry, add reserved pasta water a little at a time until the desired consistency is reached.
- Season with salt and black pepper to taste, and stir in the chopped parsley.
- Serve immediately, topped with grated Parmesan cheese if desired.
