Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic to the skillet and sauté for another minute until fragrant.

- Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it directly to the skillet with the lamb.
- Toss the pasta with the lamb mixture, adding reserved pasta water as needed to create a light sauce.
- Stir in the chopped mint, parsley, and lemon juice. Mix well and adjust seasoning if necessary.
- Serve hot, garnished with grated Parmesan cheese if desired.
