  • Kale - 100 grams, chopped
  • Garlic - 3 cloves, minced
  • Olive oil - 3 tablespoons
  • Red pepper flakes - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional, kosher) - 30 grams, grated
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and red pepper flakes to the skillet, sautéing for about 1 minute until fragrant but not browned.
  4. Add the chopped kale to the skillet, stirring well to coat it in the oil and garlic. Cook for about 5-7 minutes until the kale is wilted and tender.
  5. Once the pasta is ready, reserve 1/2 cup of pasta water and drain the rest.
  6. Add the drained pasta to the skillet with the sautéed kale, mixing well. If the mixture seems dry, add some reserved pasta water as needed.
  7. Season with salt, black pepper, and lemon juice. Toss everything together until well combined.
  8. Serve hot, garnished with grated Parmesan cheese if desired.
