Ingredients

  • Pasta (penne or rigatoni) - 200 grams
  • Hot Italian sausage (Kosher) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 3 cloves
  • Red pepper flakes - 1/2 teaspoon
  • Canned diced tomatoes (with juice) - 400 grams
  • Fresh basil (chopped) - 1/4 cup
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (grated, optional) - 30 grams

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Remove the casing from the hot Italian sausage and crumble the sausage into the skillet.
  3. Cook the sausage for about 5-7 minutes, or until browned and cooked through, breaking it up with a spoon as it cooks.
  4. Add the minced garlic and red pepper flakes to the skillet and sauté for about 1 minute until fragrant.
  5. Pour in the canned diced tomatoes (with juice) and stir to combine. Simmer the mixture for about 10 minutes, allowing the flavors to meld together.
  6. Add the cooked pasta to the skillet and toss to coat in the sauce. Stir in the chopped fresh basil, and season with salt and black pepper to taste.
  7. Serve hot, garnished with grated Parmesan cheese if desired.
