Ingredients
- Pasta (spaghetti or fettuccine) - 150 grams
- Goat cheese - 100 grams, crumbled
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 200 grams, halved
- Fresh basil - 10 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
- Add the halved cherry tomatoes to the skillet and cook for about 3-4 minutes until they start to soften and release their juices.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it directly to the skillet with the tomatoes and garlic.
- Add the crumbled goat cheese to the pasta and toss everything together, adding reserved pasta water a little at a time until the desired creaminess is reached.
- Stir in the chopped fresh basil, and season with salt and black pepper to taste.
- Serve immediately, garnished with grated Parmesan cheese if desired.
