  • Goat cheese - 100 grams, crumbled
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Fresh basil - 10 grams, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  3. Add the halved cherry tomatoes to the skillet and cook for about 3-4 minutes until they start to soften and release their juices.
  4. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta and add it directly to the skillet with the tomatoes and garlic.
  5. Add the crumbled goat cheese to the pasta and toss everything together, adding reserved pasta water a little at a time until the desired creaminess is reached.
  6. Stir in the chopped fresh basil, and season with salt and black pepper to taste.
  7. Serve immediately, garnished with grated Parmesan cheese if desired.
