Ingredients

  • Spaghetti - 160 grams
  • Garlic - 6 cloves, thinly sliced
  • Extra virgin olive oil - 60 ml
  • Red pepper flakes - 1/2 teaspoon
  • Parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and cook gently until it turns golden brown, about 2-3 minutes. Be careful not to burn the garlic.
  3. Add the red pepper flakes to the skillet and stir, cooking for an additional 30 seconds to release their flavor.
  4. Once the pasta is done, reserve about 1/2 cup of the pasta cooking water, then drain the pasta.
  5. Add the drained pasta to the skillet with the garlic oil. Toss to coat, adding reserved pasta water a little at a time to help create a light sauce.
  6. Stir in the chopped parsley and season with salt and black pepper to taste.
  7. Serve immediately, garnished with additional parsley if desired.
