  • Olive oil - 2 tablespoons
  • Garlic (minced) - 4 cloves
  • Zucchini (sliced) - 1 medium
  • Bell pepper (diced) - 1 medium
  • Cherry tomatoes (halved) - 150 grams
  • Spinach (fresh) - 100 grams
  • Parmesan cheese (grated) - 50 grams
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil (chopped) - 2 tablespoons

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant but not browned.
  4. Add the sliced zucchini and diced bell pepper to the skillet, cooking for about 5-7 minutes until they are tender.
  5. Stir in the halved cherry tomatoes and fresh spinach, cooking for an additional 2-3 minutes until the spinach wilts.
  6. Once the pasta is cooked, drain it and reserve about 1/2 cup of the pasta water.
  7. Add the drained pasta to the skillet with the vegetables, tossing to combine.
  8. Gradually add the reserved pasta water to create a light sauce, then stir in the grated Parmesan cheese until melted and evenly distributed.
  9. Season with salt and black pepper to taste, and finish with fresh basil before serving.
