- Fresh spinach - 150 grams
- Garlic - 4 cloves, minced
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red pepper flakes (optional) - 1/4 teaspoon
- Parmesan cheese (optional) - 30 grams, grated
Steps
- In a medium saucepan, bring 1 liter of salted water to a boil. Add the quinoa and rice, reduce the heat to low, cover, and simmer for about 15-20 minutes until cooked and water is absorbed.
- While the quinoa and rice are cooking, bring another pot of salted water to a boil for the pasta. Cook the pasta according to package instructions until al dente, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Season with salt, black pepper, and red pepper flakes if using.
- Combine the cooked pasta, quinoa, and rice into the skillet with the spinach and garlic. Toss everything together until well mixed and heated through, about 2-3 minutes.
