  • Rice (white or brown) - 50 grams
  • Fresh spinach - 150 grams
  • Garlic - 4 cloves, minced
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes (optional) - 1/4 teaspoon
  • Parmesan cheese (optional) - 30 grams, grated

Steps

  1. In a medium saucepan, bring 1 liter of salted water to a boil. Add the quinoa and rice, reduce the heat to low, cover, and simmer for about 15-20 minutes until cooked and water is absorbed.
  2. While the quinoa and rice are cooking, bring another pot of salted water to a boil for the pasta. Cook the pasta according to package instructions until al dente, then drain and set aside.
