Ingredients

  • Whole wheat pasta - 100 grams
  • Quinoa - 50 grams
  • Fresh spinach - 150 grams
  • Garlic - 4 cloves, minced
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Parmesan cheese - 30 grams, grated (optional)
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a medium pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. In a separate pot, bring 1 cup of water to a boil. Add the quinoa and reduce heat to low. Cover and simmer for about 15 minutes, or until the quinoa is fluffy and the water is absorbed.
  3. While the pasta and quinoa are cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
  4. Add the fresh spinach to the skillet and sauté for about 3-4 minutes, until wilted. Season with salt, black pepper, and red pepper flakes if using.
  5. Once the pasta is cooked, drain it and add it to the skillet with the spinach and garlic. Stir in the cooked quinoa and mix well to combine.
  6. Remove from heat and drizzle with lemon juice. If desired, sprinkle grated Parmesan cheese on top before serving.
