  • Pasta (spaghetti or linguine) - 200 grams
  • Fresh spinach - 150 grams
  • Garlic - 4 cloves, minced
  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually around 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
  3. Add the fresh spinach to the skillet and cook, stirring frequently, until wilted, about 2-3 minutes.
  4. Once the pasta is cooked, reserve 1/2 cup of the pasta water and drain the rest.
  5. Add the drained pasta to the skillet with the garlic and spinach. Toss to combine, adding reserved pasta water a little at a time until the desired sauciness is reached.
  6. Season with salt, black pepper, and red pepper flakes if using. Mix well.
  7. Serve hot, topped with grated Parmesan cheese if desired.
