- Olive oil - 3 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually around 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
- Add the fresh spinach to the skillet and cook, stirring frequently, until wilted, about 2-3 minutes.
- Once the pasta is cooked, reserve 1/2 cup of the pasta water and drain the rest.
- Add the drained pasta to the skillet with the garlic and spinach. Toss to combine, adding reserved pasta water a little at a time until the desired sauciness is reached.
- Season with salt, black pepper, and red pepper flakes if using. Mix well.
- Serve hot, topped with grated Parmesan cheese if desired.
