Ingredients

  • Spaghetti - 200 grams
  • Extra virgin olive oil - 4 tablespoons
  • Garlic - 4 cloves, thinly sliced
  • Red pepper flakes - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Grated Parmesan cheese - 2 tablespoons (optional, ensure it's kosher)

Steps

  1. Bring a large pot of salted water to a boil and add the spaghetti. Cook according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the sliced garlic to the skillet and sauté for 1-2 minutes until golden and fragrant, being careful not to burn it.
  4. Stir in the red pepper flakes and cook for an additional 30 seconds.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water and then drain the pasta.
  6. Add the drained pasta to the skillet with the garlic oil, tossing to combine.
  7. If the pasta seems dry, gradually add reserved pasta water as needed until the desired consistency is achieved.
  8. Season with salt and black pepper to taste, and mix in the chopped parsley.
  9. Serve hot, topped with grated Parmesan cheese if desired.
