Ingredients

  • Duck breast - 250 grams
  • Pasta (fettuccine or pappardelle) - 150 grams
  • Olive oil - 1 tablespoon
  • Shallots - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Red wine - 100 ml
  • Chicken broth - 200 ml
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional, for serving) - 20 grams

Steps

  1. Score the skin of the duck breast in a crisscross pattern, being careful not to cut into the meat.
  2. Season the duck breast with salt and black pepper on both sides.
  3. Heat the olive oil in a skillet over medium heat. Place the duck breast skin-side down and cook for about 6-8 minutes until the skin is crispy and golden brown.
  4. Flip the duck breast and cook for an additional 4-5 minutes for medium-rare or longer to your desired doneness. Remove from the skillet and let rest for 5 minutes before slicing.
  5. In the same skillet, add chopped shallots and minced garlic. Sauté for 2-3 minutes until the shallots are translucent.
  6. Pour in the red wine and scrape the bottom of the skillet to deglaze, reducing the liquid by half (about 3-4 minutes).
  7. Add the chicken broth and fresh thyme, and let simmer for another 5-7 minutes until the sauce thickens slightly. Season with salt and pepper to taste.
  8. Meanwhile, cook the pasta according to package instructions until al dente. Drain and reserve a bit of pasta water.
  9. Slice the duck breast thinly and toss the pasta with the sauce, adding a little reserved pasta water if needed for consistency.
  10. Serve the pasta topped with sliced duck and sprinkle with Parmesan cheese, if desired.
