- Shallot - 1, finely chopped
- Fresh thyme - 1 teaspoon, chopped
- Fresh rosemary - 1 teaspoon, chopped
- Salt - to taste
- Black pepper - to taste
- Chicken broth - 250 milliliters
- Parmesan cheese - 30 grams, grated (optional)
Steps
- 1. Begin by scoring the skin of the duck breast in a crisscross pattern, being careful not to cut into the meat.
- 2. Season the duck breast with salt and black pepper on both sides.
- 3. In a skillet, heat 1 tablespoon of olive oil over medium heat, then place the duck breast skin-side down in the skillet.
- 4. Cook the duck for about 6-8 minutes, allowing the fat to render and the skin to become crispy. Flip and cook for an additional 4-5 minutes until the meat is cooked through but still pink in the center. Remove from the skillet and let rest.
- 5. In the same skillet, add the remaining tablespoon of olive oil, and sauté the minced garlic and chopped shallot until fragrant and translucent, about 2-3 minutes.
- 6. Stir in the chopped thyme and rosemary, cooking for another minute before adding the chicken broth. Bring to a simmer.
- 7. Meanwhile, cook the pasta according to package instructions in salted boiling water until al dente, then drain.
- 8. Slice the duck breast thinly and return it to the skillet with the broth and herbs. Add the cooked pasta, tossing to combine and coat the pasta in the sauce. Adjust seasoning with salt and pepper as needed.
- 9. Serve immediately, garnished with grated Parmesan cheese if desired.
