Ingredients
- Pasta (fettuccine or pappardelle) - 200 grams
- Duck breast - 2 pieces (approximately 300 grams total)
- Fresh corn kernels - 1 cup (about 150 grams)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Shallot - 1, finely chopped
- Fresh thyme - 1 teaspoon, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional, for serving) - 30 grams, grated
- Fresh parsley - for garnish
Steps
- 1. Begin by scoring the skin of the duck breast in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.
- 2. In a cold skillet, place the duck breasts skin-side down and turn the heat to medium. Cook for about 6-8 minutes until the skin is crispy and golden brown, then flip and cook for another 4-5 minutes until the meat is medium-rare. Remove from the skillet and let rest for 5 minutes before slicing.
- 3. While the duck is resting, bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
- 4. In the same skillet used for the duck, add olive oil, minced garlic, and chopped shallot. Sauté for 2-3 minutes until fragrant and translucent.
- 5. Add the fresh corn kernels and thyme to the skillet, cooking for another 3-4 minutes until the corn is tender. Season with salt and pepper to taste.
- 6. Toss the cooked pasta into the skillet with the corn mixture, adding a bit of reserved pasta water to create a light sauce. Mix well to combine.
- 7. Slice the duck breast and arrange it on top of the pasta. Garnish with grated Parmesan cheese and fresh parsley before serving.
