  • Pasta (fettuccine or pappardelle) - 200 grams
  • Duck breast (skin-on) - 250 grams
  • Olive oil - 1 tablespoon
  • Shallot - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Chicken broth - 200 ml
  • Heavy cream - 100 ml
  • Parmesan cheese (grated) - 50 grams
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Chives - for garnish, chopped

Steps

  1. Cook the pasta according to package instructions in a pot of salted boiling water until al dente. Drain and set aside.
  2. Score the skin of the duck breast in a crisscross pattern, being careful not to cut into the meat. Season both sides with salt and pepper.
  3. In a skillet, heat the olive oil over medium heat and place the duck breast skin-side down. Cook for 6-8 minutes until the skin is crispy, then flip and cook for another 4-5 minutes. Remove from the skillet and let it rest.
  4. In the same skillet, add the chopped shallot and minced garlic, and sauté for 2-3 minutes until softened.
  5. Pour in the chicken broth and bring to a simmer, scraping the bottom of the skillet to release any browned bits. Let it reduce by half (about 5 minutes).
  6. Stir in the heavy cream and bring to a gentle simmer. Add the grated Parmesan cheese and chopped thyme, and stir until the cheese is melted and the sauce is creamy. Season with salt and pepper to taste.
  7. Slice the rested duck breast thinly and mix it into the sauce. Add the cooked pasta, tossing to coat well.
  8. Serve immediately, garnished with chopped chives.
