- Duck breast (skin-on) - 250 grams

- Shallot - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Chicken broth - 200 ml
- Heavy cream - 100 ml
- Parmesan cheese (grated) - 50 grams
- Fresh thyme - 1 teaspoon, chopped

- Black pepper - to taste
- Chives - for garnish, chopped
Steps
- Cook the pasta according to package instructions in a pot of salted boiling water until al dente. Drain and set aside.
- Score the skin of the duck breast in a crisscross pattern, being careful not to cut into the meat. Season both sides with salt and pepper.
- In a skillet, heat the olive oil over medium heat and place the duck breast skin-side down. Cook for 6-8 minutes until the skin is crispy, then flip and cook for another 4-5 minutes. Remove from the skillet and let it rest.
- In the same skillet, add the chopped shallot and minced garlic, and sauté for 2-3 minutes until softened.
- Pour in the chicken broth and bring to a simmer, scraping the bottom of the skillet to release any browned bits. Let it reduce by half (about 5 minutes).
- Stir in the heavy cream and bring to a gentle simmer. Add the grated Parmesan cheese and chopped thyme, and stir until the cheese is melted and the sauce is creamy. Season with salt and pepper to taste.
- Slice the rested duck breast thinly and mix it into the sauce. Add the cooked pasta, tossing to coat well.
- Serve immediately, garnished with chopped chives.
