- Duck legs - 2 (about 500g)
- Pasta (fettuccine or pappardelle) - 200g
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Red wine - 100ml
- Chicken broth - 250ml
- Fresh thyme - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Preheat your oven to 180°C (350°F).
- Season the duck legs with salt and pepper, then heat olive oil in a large, oven-safe skillet over medium-high heat.
- Sear the duck legs skin-side down for 5-7 minutes until the skin is golden brown, then flip and sear the other side for another 5 minutes.
- Remove the duck from the skillet and set aside. Add the chopped onion, garlic, carrot, and celery to the skillet, sautéing for 5 minutes until softened.
- Pour in the red wine, scraping up any browned bits from the bottom of the skillet, and let it simmer for 3-4 minutes until slightly reduced.
- Add the chicken broth and thyme, then return the duck legs to the skillet, skin-side up. Cover with a lid or foil and transfer to the oven.
- Cook in the oven for 30-35 minutes until the duck is tender and easily pulls apart.
- While the duck is cooking, bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- Once the duck is done, remove it from the oven and shred the meat, discarding the bones and skin. Stir the shredded duck back into the sauce.
- Combine the pasta with the duck sauce in the skillet, tossing to coat evenly. Serve hot, garnished with fresh parsley.
