Ingredients

  • Duck legs - 2 (about 500g)
  • Pasta (fettuccine or pappardelle) - 200g
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Red wine - 100ml
  • Chicken broth - 250ml
  • Fresh thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Season the duck legs with salt and pepper, then heat olive oil in a large, oven-safe skillet over medium-high heat.
  3. Sear the duck legs skin-side down for 5-7 minutes until the skin is golden brown, then flip and sear the other side for another 5 minutes.
  4. Remove the duck from the skillet and set aside. Add the chopped onion, garlic, carrot, and celery to the skillet, sautéing for 5 minutes until softened.
  5. Pour in the red wine, scraping up any browned bits from the bottom of the skillet, and let it simmer for 3-4 minutes until slightly reduced.
  6. Add the chicken broth and thyme, then return the duck legs to the skillet, skin-side up. Cover with a lid or foil and transfer to the oven.
  7. Cook in the oven for 30-35 minutes until the duck is tender and easily pulls apart.
  8. While the duck is cooking, bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  9. Once the duck is done, remove it from the oven and shred the meat, discarding the bones and skin. Stir the shredded duck back into the sauce.
  10. Combine the pasta with the duck sauce in the skillet, tossing to coat evenly. Serve hot, garnished with fresh parsley.
