  • Shallot (finely chopped) - 1 medium
  • Mushrooms (sliced, such as cremini or button) - 200 grams
  • Vegetable broth - 1 cup (240 ml)
  • Heavy cream - 1/2 cup (120 ml)
  • Parmesan cheese (grated) - 1/4 cup (25 grams)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (chopped) - 2 tablespoons

Steps

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, and sauté for 2-3 minutes until fragrant and translucent.
  3. Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are browned and tender.
  4. Pour in the vegetable broth and bring to a simmer. Let it cook for about 5 minutes to reduce slightly.
  5. Lower the heat and stir in the heavy cream. Cook for another 2-3 minutes until the sauce thickens slightly.

  7. Toss the cooked pasta in the sauce until fully coated. If the sauce is too thick, add a little pasta water to reach desired consistency.
