- Fresh lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Fresh basil leaves - 10 grams, plus extra for garnish
- Salt - 1/2 teaspoon, or to taste
- Black pepper - 1/4 teaspoon, or to taste
- Parmesan cheese (optional) - 20 grams, grated
Steps
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, prepare the avocado sauce. In a food processor, combine the ripe avocado, minced garlic, lemon juice, olive oil, fresh basil, salt, and black pepper. Blend until smooth and creamy.
- Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water and drain the rest.
- In a large mixing bowl, combine the drained pasta with the avocado sauce. If the sauce is too thick, gradually add the reserved pasta water until you reach your desired consistency.
