  • Ripe avocado - 1 medium
  • Garlic clove - 1, minced
  • Fresh lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Fresh basil leaves - 10 grams, plus extra for garnish
  • Salt - 1/2 teaspoon, or to taste
  • Black pepper - 1/4 teaspoon, or to taste
  • Parmesan cheese (optional) - 20 grams, grated

Steps

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, prepare the avocado sauce. In a food processor, combine the ripe avocado, minced garlic, lemon juice, olive oil, fresh basil, salt, and black pepper. Blend until smooth and creamy.
  3. Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water and drain the rest.
