Ingredients

  • Pasta (fettuccine or penne) - 200 grams
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Heavy cream - 120 ml
  • Parmesan cheese - 50 grams, grated
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Reduce the heat to low and pour in the heavy cream, stirring to combine with the garlic. Let it simmer for 2-3 minutes until slightly thickened.
  4. Stir in the grated Parmesan cheese, salt, and black pepper, mixing until the cheese is melted and the sauce is smooth.
  5. Once the pasta is cooked, reserve 1/4 cup of the pasta water, then drain the pasta and add it directly to the skillet with the cream sauce. Toss to coat the pasta in the sauce, adding reserved pasta water as needed to achieve desired consistency.
  6. Serve immediately, garnished with fresh parsley and additional Parmesan if desired.
