- Fresh crab meat - 150 grams
- Sweet corn (canned or frozen) - 100 grams
- Olive oil - 2 tablespoons
- Garlic (minced) - 2 cloves
- Shallot (finely chopped) - 1 medium
- Fresh parsley (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.

- Gently fold in the fresh crab meat, lemon juice, and chopped parsley. Season with salt, black pepper, and red pepper flakes if desired.
- Add the cooked pasta to the skillet, tossing everything together. If the mixture seems dry, add reserved pasta water a little at a time until desired consistency is achieved.
- Remove from heat and serve immediately, garnished with additional parsley if desired.
