  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the fresh crab meat to the skillet, stirring gently to combine with the garlic. Cook for 2-3 minutes until heated through.
  4. While the crab is cooking, cut the avocado in half, remove the pit, and scoop out the flesh into a bowl. Mash it lightly with a fork and mix in lemon juice, salt, and black pepper.
  5. Add the cooked pasta to the skillet with the crab, along with a splash of reserved pasta water to create a light sauce. Toss to combine.
  6. Remove the skillet from heat and gently fold in the mashed avocado and chopped parsley. Adjust seasoning with additional salt, pepper, and red pepper flakes if desired.
  7. Serve immediately, garnished with extra parsley if desired.
