Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the fresh crab meat to the skillet, stirring gently to combine with the garlic. Cook for 2-3 minutes until heated through.
- While the crab is cooking, cut the avocado in half, remove the pit, and scoop out the flesh into a bowl. Mash it lightly with a fork and mix in lemon juice, salt, and black pepper.
- Add the cooked pasta to the skillet with the crab, along with a splash of reserved pasta water to create a light sauce. Toss to combine.
- Remove the skillet from heat and gently fold in the mashed avocado and chopped parsley. Adjust seasoning with additional salt, pepper, and red pepper flakes if desired.
