- Garlic - 2 cloves, minced
- Cherry tomatoes - 1 cup, halved
- Spinach - 2 cups, fresh
- Fresh basil - 1/4 cup, chopped
- Parmesan cheese - 1/4 cup, grated
- Salt - to taste
- Black pepper - to taste
- Water - 1 1/4 cups
Steps
- In a medium saucepan, bring 1 cup of water to a boil and add the couscous. Remove from heat, cover, and let it sit for 5 minutes.
- In another pot, bring 1 cup of water to a boil, add the pasta, and cook according to the package instructions until al dente.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Fluff the couscous with a fork and add it to the skillet with the vegetable mixture. Drain the pasta and add it as well.
- Toss everything together, adding the chopped basil, salt, and black pepper to taste.
- Serve the dish warm, topped with grated Parmesan cheese.
