Ingredients

  • Couscous - 1/2 cup
  • Pasta (small shapes like shells or orzo) - 1/2 cup
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 1 cup, halved
  • Spinach - 2 cups, fresh
  • Fresh basil - 1/4 cup, chopped
  • Parmesan cheese - 1/4 cup, grated
  • Salt - to taste
  • Black pepper - to taste
  • Water - 1 1/4 cups

Steps

  1. In a medium saucepan, bring 1 cup of water to a boil and add the couscous. Remove from heat, cover, and let it sit for 5 minutes.
  2. In another pot, bring 1 cup of water to a boil, add the pasta, and cook according to the package instructions until al dente.
  3. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
  5. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  6. Fluff the couscous with a fork and add it to the skillet with the vegetable mixture. Drain the pasta and add it as well.
  7. Toss everything together, adding the chopped basil, salt, and black pepper to taste.
  8. Serve the dish warm, topped with grated Parmesan cheese.
