Ingredients

  • Pasta (fusilli or penne) - 150 grams
  • Fresh corn kernels - 1 cup (approximately 150 grams)
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh basil - 1/4 cup, chopped
  • Parmesan cheese (optional) - 2 tablespoons, grated
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red pepper flakes (optional) - 1/4 teaspoon

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Stir in the fresh corn kernels and cook for another 3-4 minutes until they are tender.
  5. Once the pasta is cooked, reserve 1/4 cup of pasta water, then drain the pasta and add it directly to the skillet with the corn.
  6. Add the reserved pasta water, chopped basil, salt, black pepper, and red pepper flakes (if using) to the skillet, tossing everything together to combine well.
  7. Remove from heat, and if desired, sprinkle with grated Parmesan cheese before serving.
