- Pasta (fusilli or penne) - 150 grams
- Fresh corn kernels - 1 cup (approximately 150 grams)
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh basil - 1/4 cup, chopped
- Parmesan cheese (optional) - 2 tablespoons, grated
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red pepper flakes (optional) - 1/4 teaspoon
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente, usually about 8-10 minutes.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Stir in the fresh corn kernels and cook for another 3-4 minutes until they are tender.
- Once the pasta is cooked, reserve 1/4 cup of pasta water, then drain the pasta and add it directly to the skillet with the corn.
- Add the reserved pasta water, chopped basil, salt, black pepper, and red pepper flakes (if using) to the skillet, tossing everything together to combine well.
- Remove from heat, and if desired, sprinkle with grated Parmesan cheese before serving.
