Ingredients

  • Spaghetti - 200 grams
  • Canned clams (in juice) - 400 grams
  • Garlic - 4 cloves, minced
  • Olive oil - 3 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  3. Add the canned clams (with their juice) to the skillet and stir well. Allow to simmer for about 3-5 minutes to heat through.
  4. Once the spaghetti is cooked, reserve 1/2 cup of the pasta water, then drain the pasta.
  5. Add the drained spaghetti to the skillet with the clam sauce. Toss to combine, adding reserved pasta water a little at a time until the desired consistency is reached.
  6. Stir in the chopped parsley, lemon juice, salt, pepper, and red pepper flakes (if using). Mix well.
  7. Serve immediately, garnished with additional parsley if desired.
