- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Lemon zest - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese - 30 grams, grated (optional)
- Pine nuts - 2 tablespoons, toasted (optional)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta cooks, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the chopped cilantro, lemon juice, lemon zest, salt, and black pepper to the skillet. Stir well and cook for an additional 2-3 minutes to combine the flavors.
- Once the pasta is cooked, reserve 1/2 cup of pasta water and drain the rest. Add the drained pasta to the skillet with the cilantro mixture.
- Toss the pasta in the skillet, adding reserved pasta water a little at a time to create a light sauce as needed. Adjust seasoning to taste.
- Serve immediately, topped with grated Parmesan cheese and toasted pine nuts if desired.
