- Pasta (spaghetti or linguine) - 160 grams
- Fresh parsley - 1 cup, chopped
- Fresh cilantro - 1/2 cup, chopped
- Garlic - 2 cloves, minced
- Red wine vinegar - 2 tablespoons
- Olive oil - 1/4 cup
- Oregano - 1 teaspoon, dried
- Red pepper flakes - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes - 100 grams, halved
- Parmesan cheese - 30 grams, grated (optional)
Steps
- In a pot, bring salted water to a boil and cook the pasta according to package instructions until al dente, about 8-10 minutes.
- While the pasta is cooking, prepare the chimichurri sauce by combining parsley, cilantro, minced garlic, red wine vinegar, olive oil, oregano, red pepper flakes, salt, and black pepper in a bowl. Mix well until combined.
- Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water, then drain the pasta.
- In a large mixing bowl, combine the drained pasta with the chimichurri sauce and the reserved pasta water, tossing until the pasta is well coated.
- Fold in the halved cherry tomatoes gently, mixing them with the pasta.
- Serve immediately, garnished with grated Parmesan cheese if desired.
