Ingredients

  • Pasta (spaghetti or linguine) - 160 grams
  • Fresh parsley - 1 cup, chopped
  • Fresh cilantro - 1/2 cup, chopped
  • Garlic - 2 cloves, minced
  • Red wine vinegar - 2 tablespoons
  • Olive oil - 1/4 cup
  • Oregano - 1 teaspoon, dried
  • Red pepper flakes - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100 grams, halved
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. In a pot, bring salted water to a boil and cook the pasta according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, prepare the chimichurri sauce by combining parsley, cilantro, minced garlic, red wine vinegar, olive oil, oregano, red pepper flakes, salt, and black pepper in a bowl. Mix well until combined.
  3. Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water, then drain the pasta.
  4. In a large mixing bowl, combine the drained pasta with the chimichurri sauce and the reserved pasta water, tossing until the pasta is well coated.
  5. Fold in the halved cherry tomatoes gently, mixing them with the pasta.
  6. Serve immediately, garnished with grated Parmesan cheese if desired.
