- Pasta (fusilli or penne) - 150 grams
- Chicken breast - 200 grams, diced
- Firm tofu - 150 grams, cubed
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Soy sauce (kosher) - 2 tablespoons
- Vegetable broth - 250 ml
- Bell pepper (red or yellow) - 1, sliced
- Carrot - 1, julienned
- Green onions - 2, chopped
- Cornstarch - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil - for garnish
Steps
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced chicken and season with salt and black pepper. Cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and the cubed tofu. Cook until golden and crispy on all sides, about 6-8 minutes. Remove and set aside with the chicken.
- Add the minced garlic, sliced bell pepper, and julienned carrot to the skillet. Sauté for 3-4 minutes until the vegetables are tender.
- In a small bowl, mix the soy sauce, vegetable broth, and cornstarch until well combined. Pour this mixture into the skillet with the vegetables and stir to combine. Bring to a simmer for about 2-3 minutes until the sauce thickens.
- Return the chicken and tofu to the skillet and toss everything together to coat in the sauce. Cook for an additional 2 minutes.
- Add the cooked pasta to the skillet and toss until well combined. Adjust seasoning with salt and pepper if needed.
- Serve hot, garnished with chopped green onions and fresh basil.
