Ingredients

  • Pasta (fusilli or penne) - 150 grams
  • Chicken breast - 200 grams, diced
  • Firm tofu - 150 grams, cubed
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Soy sauce (kosher) - 2 tablespoons
  • Vegetable broth - 250 ml
  • Bell pepper (red or yellow) - 1, sliced
  • Carrot - 1, julienned
  • Green onions - 2, chopped
  • Cornstarch - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - for garnish

Steps

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced chicken and season with salt and black pepper. Cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil and the cubed tofu. Cook until golden and crispy on all sides, about 6-8 minutes. Remove and set aside with the chicken.
  4. Add the minced garlic, sliced bell pepper, and julienned carrot to the skillet. Sauté for 3-4 minutes until the vegetables are tender.
  5. In a small bowl, mix the soy sauce, vegetable broth, and cornstarch until well combined. Pour this mixture into the skillet with the vegetables and stir to combine. Bring to a simmer for about 2-3 minutes until the sauce thickens.
  6. Return the chicken and tofu to the skillet and toss everything together to coat in the sauce. Cook for an additional 2 minutes.
  7. Add the cooked pasta to the skillet and toss until well combined. Adjust seasoning with salt and pepper if needed.
  8. Serve hot, garnished with chopped green onions and fresh basil.
